Production Method

Ancestral Process

True to ancestral mezcal production, the agave was harvested, slow cooked underground, hand mashed with wooden mallets and left to ferment naturally. The resulting tepache was then double distilled in ancestral 70L clay pot stills to yield an exquisite mezcal that is rich, earthy, complex and a true expression of the terroir.
