MEZCAL ANCESTRAL

Encompassing our range of Ancestral Mezcals, which are hand selected from our single village Palenque and chosen for their uniqueness, rarity and complexity. 

Select micro-batch yields (less than 200L per release), are hand mashed, naturally fermented, and clay pot distilled to proof, yielding the ultimate luxury expression of the agave and terroir.

ANCESTRAL PROCESS

Cooked agave are crushed exclusively by hand with wooden mallets inside a wooden canoa (hollowed out tree trunk).

Fermentation is naturally performed in wooden vats with agave fiber and lasts 7 – 10 days.

Ancestral mezcal is incredibly rare and makes up less than 0.3% of all Mezcal production.
