These award-winning mezcals are intentionally distilled to proof, Joven (un-aged) and agave-forward, offering balance & complexity.

The copper / clay distillation on our Ensamble and Tobala expressions are unique to our methods and to the category.

ARTESANAL PROCESS

Tending to an earthpit oven cooking agave

Cooked over firewood and rocks in conical earthpit for over 5 days fueled by certified reclaimed wood.

The cooked agave are only crushed with a Tahona (volcanic milling stone)

Fermentation is naturally performed in wooden vats with agave fiber and lasts 7 – 10 days.

Espadin is double distilled exclusively in 250 Liter copper stills. Our Ensambles and Tobala are distilled first in 250 Liter Copper stills followed by 70 Liter Ancestral Clay Pots, yielding exquisite depth and complexity that is unique to the category. Stills are fired using certified reclaimed wood.
