Aroma

Alluring stewed fruits with vanilla leads into rich hints of caramelized minced pie and woody notes.

Taste

Silky smooth on the pallet with a pronounced mix of warm jam, dried fruit, burnt sugar and cooked agave wrapped in a light woody essence.

Finish

More fruit forward on nose, and deep hints of caramelized cooked minced pie, woody vanilla.

Production Method

Ancestral Process

True to ancestral mezcal production, the agave was harvested, slow cooked underground, hand mashed with wooden mallets and left to ferment naturally. The resulting tepache was then double distilled in ancestral 70L clay pot stills to yield an exquisite mezcal that is rich, earthy, complex and a true expression of the terroir.
