Artisanal Process

Cooked over firewood and rocks in conical earthpit for over 5 days fueled by certified reclaimed wood.

The cooked agave are only crushed with a Tahona (volcanic milling stone)

Fermentation is naturally performed in wooden vats with agave fiber and lasts 7 – 10 days.

Distillation stills are fired using certified reclaimed wood and depending on the expression that we will release, our still can vary between our copper and clay stills
